Rum Fruitcake Cookies

  1. Beat: 1 cup sugar and 3/4 cup shortening, add 3 eggs, 1/3 cup orange juice, 1 Tablespoon rum extract, beat 2 minutes
  2. Combine: 3 cups flour, 2 teaspoons baking powder, 1 teaspoon each: baking soda & salt
  3. Add: 2 cups candied mixed fruit, 1 cup each: raisins and nuts (chopped)
  4. Stir dry mixture into shortening mixture
  5. Drop by teaspoonfuls onto greased cookie sheets, bake 10-12 minutes at 375.
